About Don Froylan
The Ochoa family has been producing queso fresco since the late 1990’s when Don Froylan and Zoila moved their family to Oregon.
It was there that they were unable to find any authentic Mexican cheese. It started in their home kitchen with 10 gallons of milk every day involving the whole family from youngest to oldest had their share in the cheese making process.
As it became popular Don Froylan had the dream to open a commercial creamery but he didn’t know where to begin. Sadly before his dreams could be realized he suddenly past away in the early 2000.
The rest of the family decided to make their fathers dream a reality and in 2003 and lots of hard work they opened the creamery and chose their brand name to be Don Froylan in loving memory of their hard working father.
In 2018 we proudly continue to produce of the most authentic and highest quality Mexican line of cheese in the U.S. American Cheese Society winners include Queso Fresco, Queso Panela, Queso Botanero, and our distinguished hand stretched Queso Oaxaca.
Queseria Ochoa specializes in the traditional cheeses of Mexico, handcrafting Queso Fresco, Oaxaca and Cotija at their creamery in Salem. Using milk from a local dairy, owner and cheesemaker Francisco Ochoa makes cheese 6 days a week
Francisco took the dream started by his parents Froylan and Zoila and has made it a successful and tasty family business, running a cheese-making facility and cheese shop in salem.
